After seeing Sarah at Suite Apple Pie‘s take on spaghetti squash, I really wanted to give it a go. We bought one on the weekend and I made it tonight. At first, I think I had the oven on too low (350 degrees). I was getting impatient, so I turned it up to 400 degrees. It could probably have been cooked a little longer, but it was a nice kind of crunchy texture.

Seafood Piccata with Spaghetti Squash

1 spaghetti squash
1/2 jar of Trader Joe’s Piccata sauce
2 tomatoes
seafood – shrimp and cuttlefish

1. Cut squash and roast cut side down, 400 degrees for probably 45 minutes or so.
2. Near the end, heat sauce, add seafood and tomatoes.
3. Combine and eat!

 

Yum! I will be trying this again, with a different type of sauce. The best part – Graham liked it too!! He is wary of cooking experiments (his sister had many a bad experiment when he was growing up), but he enjoyed this. Bonus? There was a serving left over for his lunch. (By the way – that’s a bonus for me, as I am the official lunch maker in this house!)

Time to catch up on blog reading, then New Moon! Oh, forgot to say – the books we ordered online have arrived and now I will have books 3 & 4… excellent weekend reading! In awhile, I may have a mini-muffin or two. Good night!
