Me, myself and I Part II

I am home alone again tonight! Graham went to one of his company’s plants today, so he’s on the road coming back now. I had another crazy workday today… wasn’t leaving my desk until 6:23. That, considering that I was planning on going to spinning at 4:45. Suffice it to say, my afternoon was long! I was also intending to go to Ikea on my way home, but just didn’t feel like it.

For dinner, I decided on my favourite university lunch – quesadillas. I had one cheddar, green pepper and tomato (the standard). I switched it up on the second and did goat cheese, tomato and spinach. Tasty!

That wasn’t enough of a dinner, so I also had a small bowl of yogurt, with half a banana, a sprinkle of granola and a little honey.

I’m getting ready to watch a few of my shows now, while enjoying a warm cup of tea! I might just have a slice of peach bread defrosting in the oven too!

I’m hoping that tomorrow will be much more calm. I am going out with my colleagues after work, but don’t plan on being out later than dinner time. Hope you had a great day today!

  1. Run: Instead of going to Running Room, I ran on my own after getting home from work. My regular route is 6.4km and it’s a speedy way to get in a little exercise. While running, I saw a woman whose shoes still had a sticker/price tag stuck to the bottom. Please, please, please! Take the sticker/price tag off the bottom of your shoes! That goes for all of you!
  2. Home: Here is a picture of our new spice bar! Graham hung it up on the weekend, and I forgot to show you!
  3. Dinner: It’s me alone again tonight, and there wasn’t anything in the fridge for dinner. I debated on pancakes, but thought I should go a little healthier. Tada!
  4. (or 3b) Dinner, Part II: The egg was a little weird (soft boiled), so I chucked that and had a few crackers with PB. 
  5. Relaxing: Catching up on blogs, just about to start Amazing Race (PVR’d from Sunday night).

Today I tried something new for Graham’s breakfast – one component was yogurt!

He also had juice, coffee and an english muffin with Nutella. Breakfast meant for a man, or a four year old! 🙂

Food at breakfast and lunch was pretty boring for me – coffee and a raisin tea biscuit for breakfast (nice treat!), english muffin with PB and my own yogurt parfait (yogurt, granola and half a banana – in a glass container, no less) for lunch, and then half a Pecan Pie Larabar for snack at 4:15. This wasn’t my favourite… in fact, maybe my least favourite? I don’t think I’ve ever had Pecan Pie before, so it’s not a flavour that I like or am used to.

Graham’s dad came over for dinner, so I only have random in-the-kitchen shots. 

Tomorrow can’t come soon enough – tomorrow night, that is! I’m going to catch up on all my blogs, then read in bed. Night all!


Ugh

My day started off well. I had two packages of the instant oatmeal again, and took a photo!

Here is the box, so you can see which one I am having.

Pretty soon after that, my day headed down the terrible path. The kind of day where you just want to bury your head in the sand (or hide under the covers). But you know if you do that, your problems will be one hundred times bigger when you resurface. I pretty much felt tense and nervous all day. And am still feeling that way.

But, along to lunch. I had a smoked salmon wrap, with a smear of avocado, lettuce, green pepper and cherry tomatoes. I also had plain yogurt with raspberries and a little honey. So tasty! I took a photo, but it was absolutely terrible. Sorry.

Now, on to my snack. I discovered Heather and Mark’s blog, Hangry Pants, and while reading it, came across this post. Heather was talking about snacking and her great readers were giving great advice. It’s something I’ve been thinking about lately. If I am running or going to spinning after work, I will sometimes have a snack (banana or something) mid-afternoon. Then I might have something when I get home. If I’m not working out, I will come home and eat, eat, eat, pretty much. If I’m in the apartment after work and before dinner, I just can’t help myself. A great tip that I saw from one of the comments was to leave your snack out so when you’re home, it’s right there. Pre-portioned. I think that’s a really good idea! I didn’t really practice this today, but I do intend to start doing that. Today, I had a banana around 3:15, then this snack when I got home…

That’s Trader Joe’s Simply Almonds, Cashews and Cranberries Trail Mix. Graham and I are going out for a run soon, so that’s enough for now.

Lots going on!

So, where did we leave off? Yesterday afternoon, I guess… Graham went to the library and I went to Ikea and the grocery store. Mid-afternoon, after I was back with the groceries, it started raining hard. Graham came back from the library, we tidied up and puttered around a little, then went out for a run. A rainy run! But we made it.

For dinner, we were having a friend over. I didn’t take photos of our actual meal, but it was so tasty!

First, we had oysters. Then peppercorn steak, spinach salad with mandarin oranges and baguette. Then, for dessert, we had rocky road brownies and ice cream. Here are some photos…

We had such a nice time – good conversation and great food!

Rocky Road Brownies
Everyday Food – Martha Stewart – June 2008

1/2 c. unsalted butter, cut into pieces
1 bag semisweet chocolate chips
1/2 c. granulated sugar
1/2 c. packed light brown-sugar
1/2 tsp. salt
2 eggs
3/4 c. all-purpose flour
1 c. mini marshmallows
1/2 c. chopped nuts – I used peanuts

1. Preheat oven to 350 degrees. Line a 8″ square pan with parchment. (She says to grease pan, then also grease parchment, but I just used parchment.)
2. In a heatproof bowl set over (not in) a saucepan of simmering water, combine butter and 1 c. chocolate chips. Heat, stirring occasionally, just until melted, 3 – 5 minutes.
3. Remove mixture from heat; stir in sugars and salt, then eggs, and finally flour, stirring til just combined. Spread batter evenly in prepared pan. Bake until a toothpick inserted in center comes out with moist crumbs attached, 30 to 35 minutes.
4. Remove from oven, and sprinkle with remaining chocolate chips, then marshmallows and nuts. Bake until chocolate is shiny and marshmallows are puffed, about 5 minutes. Cool completely in pan. Using paper over hang, lift cake onto a work surface; cut into 16 squares. (To store, keep in an airtight container at room temperature, up to 3 days.)

Now, on to today. Graham and I set out on our long run around 8:45. He wasn’t feeling good at all, so stopped part way and took the subway home. I, however, ran 15k!!!! I was very excited. It was getting hot and humid towards the end, so I was happy to finish.

For breakfast, Graham had an omelette and melon, and I had pancakes, with yogurt and a nectarine. He ate one of my pancakes, too.

We went to Yorkdale quickly, then I took him to the library. We’re going to his sister’s house for dinner tonight, but for now, I am doing laundry and typing this! For lunch, I just had some avocado and cherry tomatoes, and Kashi crackers and hummus (too lazy to post a boring picture!). I might have a rocky road bar too!

Breakfast & Lunch

When I stopped at Starbuck’s yesterday morning, they had free samples of one of the new healthy breakfast choices, the fruit and nut bar. I saved it to have at work, along with my latte and peach oatmeal. The bar was tasty, so I guess a good choice if you want something sweet with your coffee, but it wasn’t
out-of-this-world good.

Lunch was boring – at my desk again!

 

I had a few candies mid-afternoon, then went to the gym for a 7k run – candies before the gym = sore tummy! But I made it through. The party last night was tonnes of fun, but I ate way too much cake!

We’re now getting breakfast ready today, but I won’t be able to post til later. See you then!
