After work yesterday, I went out to Milestone’s near work for the goodbye party of a colleague. It was really fun – about 20 or 25 people were there. I’m lucky my colleagues like socializing together and there’s always lots of laughs. I had a beer and some chips with dip and sweet potato fries.

I wasn’t super-hungry, so just made a small dinner. Those are little banana sandwiches… banana with PB and granola. So tasty!

Yup, had to get my feet in, too!

I was home from work around 5, deciding to Shred instead of run. I am 100% sick of the treadmill. I am not motivated at all. I need to run outside! It’s going to warm up for the next while, but will be rainy, so hopefully Graham and I can get out together!!!

Since it was still light out when I got home, I decided to take some kitchen pics.

I love our Ikea set up… I’d highly recommend a butcher block counter for anyone who needs extra counter space. We chop right on it (fruit and veggies, not meat) and it’s so handy for prep work.

Dinner tonight was left over from lunch. I went out with the girls from work for thai and had chicken pad thai… yum! It was so tasty, but huge! It made a great, fast dinner. I’m going to look up pad thai. I’d love to make it myself… would be a great meal for Friday night (no meat) if we did shrimp pad thai.

I’ll leave you with this random thought… I LOVE JanSport! I’ve had a JanSport backpack since the end of high school. Believe it or not… I bought it at Macy’s in 2001 when Graham and I were in NYC. We had been dating only a few months and we went to New York to visit his sister and godmother. Anyway, that’s another story! So, the zipper broke while we were in Europe in January. Knowing of JanSport’s lifetime warranty, I called and got all the directions for a repair. A month or so later, the repair shop mailed it back to me, with a new zipper… all free of charge!!! So, if you need a backpack, I highly recommend JanSport!

Yup, that was me this morning. No, I didn’t take a picture. After cleaning up and changing, I’m eating fast. Ayayaye!

In workout news, I did 9.68kms last night on the treadmill, then shredded both Level 1 and 2 this am. 

Ok, gotta eat, then run. Don’t jinx the start of your Tuesday like I did. Later!


Waffle How To… with Sarah

Step 1: Find two people who love breakfast.

Step 2: Pre-heat the waffle iron and get out the recipe.

Step 3: Make the batter.

Basic Waffles, from Joy of Cooking (p. 801) [halved when just the two of us]

  • 1 3/4 c. AP flour
  • 1 tbsp. baking powder
  • 1 tbsp. sugar 
  • 1/2 tsp. salt
  • 3 large eggs, beaten
  • 4 butter, melted
  • 1 1/2 c. milk

Whisk dry into wet until just combined.

Step 4: Make first waffle.

Step 5: Repeat, until batter is finished. Today I got two full sized, two smaller ones (sort of half-sized).

Step 6: Make fruit salad and coffee while waffles are cooking.

Step 7: Enjoy breakfast!!

YUM! We each had a full waffle, and then a smaller one, too. Waffles are one of my favourite breakfasts… Graham teases me because his parents gave me the waffle iron for my birthday. I was mad because I thought that he convinced them to get it for me, but it was really a gift for him. I didn’t used to like waffles. Now that we have this great iron, I like them just as much as Graham, maybe more!

Muffin mania

Yesterday morning I had an appt. at the bank at 8:30. I left Graham sleeping and when I came back, decided to make these muffins. But, I was feeling really hungry, from my blood adventures the day before. Instead, I made oatmeal (just with 1/3c.) so I could eat right away.

I made the muffins after breakfast, for Graham’s breakfast and to bring to my parents and grandparents.

I got 12 muffins and 10 minis.

Oatmeal Berry Muffins

Adapted from Two Peas and Their Pod, who adapted from Joy the Baker

  • 1 1/4 cups whole wheat flour
  • 1 1/4 cups oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon (I used 1 tsp.)
  • 1 cup unsweetened applesauce 
  • 1/2 cup low-fat buttermilk (I used 1% milk)
  • 1/2 cup firmly packed brown sugar
  • 2 tbsp canola oil
  • 1 large egg, lightly beaten
  • 1 tsp. vanilla (I added this, too)
  • 3/4 cup blueberries, fresh or frozen (I used 1 c. frozen raspberries and blueberries)

Preheat oven to 375 degrees.

Line a muffin tin with paper cases or spray with nonstick cooking spray.

In a large bowl combine flour, oats, baking powder, baking soda, salt and cinnamon. In a medium bowl combine applesauce, buttermilk, sugar, oil, egg, and extracts. Make a well in dry ingredients and add applesauce mixture. Stir until just moist. Fold in berries. Fill muffin cups 2/3 full. I got 12 regular muffins and 10 mini-muffins.

Bake for 16-18 minutes (I baked 20 minutes, I think, but my oven runs cool).

We went out to Mississauga,stopping to look at furniture stores along the way.

Had to have a muffin along the way! We took four to my parents’ house (and did four loads of laundry!) and four to my grandparents’ apt (and had a nice visit).

Dinner with my mum and sister was lots of fun (burgers!!) and then we went to a birthday party.
